I think my son had the most fun making the recipe he is such a good helper when it comes to mixing things. I was surprised he loved the chicken just as much as the waffles and even requested seconds. MAMA for the WIN! Maybe one day he can make these for us! I think what I liked most about this recipe was that the blueberry sauce wasn’t very sweet. I have been on a low sugar diet for about a month now and I am really enjoying eating food that isn’t super sweet. Although this recipe is a bit advanced it is completely worth the effort. The almond and tapioca flour make crispy fluffy waffles and the seasonings on the Fried Chicken will make you wish you made enough for the rest of the week.
Ingredients for Chicken:
1 Lb Chicken Breasts
2 Cups Almond Flour [ Bob’s Red Mill]
2 Tsp Garlic Powder
1 Tsp Paprika
2 Tsp Onion Powder
1 Tsp Himalayan Salt
1/2 Tsp Black Pepper
1/2 Cup Coconut Oil [ for pan]
Ingredients for Waffles:
1 1/2 Cup Almond Flour [ Bob’s Red Mill]
1 Cup Tapioca Flour [ Bob’s Red Mill]
1 Can Coconut Milk
1/2 Tsp Baking Powder
1/2 Tsp Salt
1/2 Tsp Cinnamon
1 Tsp Vanilla Extract
1/2 Cup Blueberries [ Wyman’s Blueberries]
1 Tbs Coconut oil [ For waffle iron]
Ingredients for Sauce:
1/2 Cup Blueberries [Wyman’s Blueberries]
1 Can Coconut Milk
2 Tbs Honey [ If you want a Super sweet syrup sub 4 Tbs Maple Syrup]
* Pinch of Tapioca Flour for thickening
1.Place all dry ingredients in bowl and mix
2.Place all Wet ingredients in separate bowl and mix
3.Dip the chicken in the wet ingredients first then the dry and repeat to get a good coating.
4.In a medium skillet heat the oil until it starts to bubble. The meat should make a sizzling sound when it touches the pan. Cook on both sides on medium high heat for 10 minutes and then put in the oven at 350 for 15 minutes. You can place it on a piece of parchment paper on a baking sheet.
5.Allow to sit out and cool before cutting into it.
1.Mix all the dry ingredients together in one bowl
2.Mix all your wet ingredients together in a separate bowl and combine together [ mix the wet in with the dry]
3.Add the blueberries and stir.
4.Set your Waffle iron to medium heat and preheat and brush with coconut oil to prevent sticking. Place 1/2 Cup Waffle mix into the iron and allow to cook for 5 minutes or until crispy. Remove and brush with oil again and repeat step 5.
1.In a small Pot add Coconut Milk, Blueberries, and Honey and bring to a bowl and allow to simmer for 10 minutes turn off heat.
2.Stir in a pinch of Tapioca Flour. This will make it thicken. If you prefer a more soupy consistency skip this step. Or if your in a hurry just use maple syrup and add blueberries on top.

Place the waffles on the bottom add sauce and place chicken on top. Can also turn into waffle sandwiches. YUMMMM
