Italian Roasted Eggplant Fan

Firstly, I would like to thank cookingwithoutlimits for the inspiration for the recipe. I have never before seen an eggplant cut like this and was mesmerized by the appearance of it. I do not eat any cheese, unless it’s cashew cheese, because I do not enjoy the pain it gives me afterwards. I was unable to make cashew cheese this time around but this recipe would go amazing with some cashew cheese dip. Visit my other post to get the recipe for the Cashew Cheese. This eggplant fan was my first attempt and I will be updating when I make it again.

Ingredients:

2 large eggplants. The short and thick ones work nicely and let you make more slices.

1 tomato

2 red bell peppers

Organic pizza sauce (find one with few wholesome ingredients)

Olive Oil

Salt

1 TSP Garlic powder and onion powder

Red Pepper Cashew Cheese and/ or 1 can of Pizza Sauce (* find an organic one with few ingredients)

Directions:

 

Step 1: Preheat oven to 450. Clean and Cut the eggplant. DO Not cut it all the way in half. Leave about an inch from the top otherwise you won’t get the lovely fan shape. Cut the eggplant down the middle then cut those slices and repeat. Add the salt and garlic powder in between the slices.

Step 2: Cut the red peppers and tomatoes vertically into thin slices and place in between the eggplant slices.

Step 3: Place the eggplant fans in a baking dish preferably so it keeps its shape. You can use a baking sheet as well. Drizzle both eggplants with olive oil before placing in the oven.

Step 4: Place in oven for 45 minutes or until fully cooked. 35 minutes in you can start heating up your pizza sauce in a pan on low heat.

Step 5: Transfer the pizza sauce into a gravy boat or allow guests to scoop it out of the pan themselves. I decided against pouring it over the entire eggplant in the oven because I knew it was going to fall to the bottom of the dish.

 I found that using tongs and a knife helped to get the pieces transferred to a plate most efficiently.
